May Staff Testing

Each month The Spicery staff get the chance to test out recipes at home to determine any last tweaks before we begin blending, designing and packing for the upcoming Subscription Boxes...

This month, Maria, Dan, Elizabeth and Jess each took a recipe into their hands for an evening and came back to tell us how it went!

Maria's Vietnamese Tacos with Chipotle Tuong Ot Xa

I had to be quick to grab the Vietnamese Tacos tester as it was a very popular one! As all the Food Truck recipes, it was so tasty!

I used chicken instead of pork, the fish was a delicious extra touch. I don’t think I’ve ever had fish tacos before so it was great to have a different topping. The salad, guacamole and carrot pickle added a great tangy flavour, I just love using coriander and lime!

I think my favourites were: the chilli peanuts and the chipotle tuong ot xa which we used for the next couple of days with other meals. Perfect recipe for a sunny day… hoping that this Summer, there'll be lots of sunshine!

Dan's Katsu Chicken Burger with Curry Ketchup and Wasabi Coleslaw

I managed to get the chicken katsu burger tester kit! I couldn’t wait to eat product before I had even started cooking. I’ve had the chicken katsu for lunch a few times at work and really enjoyed it, so I wanted to see what it was like to make.

It was surprisingly easy, the katsu burgers themselves consisted of placing the chicken into batter, then covering them with panko bread crumbs and frying them until golden brown.

I really enjoyed making the sides and condiments as well, especially the katsu ketchup sauce, which tasted really good in the burger and with the chips!

Date Night in Santa Fe!

Prep was a breeze for this one, especially with help from my kitchen assistant aka the husband. However this recipe had us on a blending spree -I think we used the blender about four times on this one!

The starter was really yummy, although I wish I had followed the instructions carefully and reserved some sour cream for the soup.

When it came to the main, we were a bit sceptical about whether we were doing things correctly but turned out perfect in the end (so rich and creamy and heavenly!).

Dessert came 3 hours later but who doesn’t love a late night snack? All in all, a great meal that the picky husband said he’d like to have again!

Amy's Keralan Beef Fry

Friday Night Curry Discoverer

This month I made the Keralan Beef Fry and it was AMAZING.

Really straightforward recipe, and I was able to make a couple of things in advance - the chutney and podi powder. For the beef curry I decided to cook it long and slow in the bottom oven for half a day and the beef was meltingly tender and sweet.

It went perfectly with the other veg dishes which helped balance sweetness. I swapped the tomatoes in the tomato curry for courgettes and it was still delicious, the veg softened nicely.

A big thumbs up from me and my dining companions - one of the best curry spreads I've tested at home so far!
