
Caribbean Seasoning
This fragrant blend of spices includes everything you could want from a vibrant Caribbean seasoning: warming allspice, ginger, cinnamon and nutmeg, with a little onion, garlic and chilli! We're using the oven here to cook the chicken through, but it also works great on a low BBQ or outdoor grill - perfect for summer eating!

CARIBBEAN SEASONING (1 portion = 1 ½ tbsp): salt, garlic, onion, allspice, thyme, chilli, coriander, habanero chilli, turmeric, ginger, nutmeg, cinnamon, cumin, black pepper, fenugreek, yellow MUSTARD, green cardamon, cloves
May contain CELERY and SESAME. Allergens are listed in CAPITALS
Caribbean Grilled Chicken Recipe:
PREP 5 mins
COOK 40 mins
HEAT 2
Serves 4
You Need:
4 chicken legs slashed through to the bone a few times, or use firm tofu cut into 4 thick slices for a veg version
1 lime
Coleslaw and rice or crusty bread to serve
1 portion of CARIBBEAN SEASONING
Method:
Mix the CARIBBEAN SEASONING with the juice of ½ the lime and 2 tbsp oil to make a thick paste, then stir in the chicken to fully coat
Preheat the oven to 200°C/gas mark 6
Roast the chicken, turning regularly, for 30 minutes or until cooked through to the bone and beginning to char around the edges
Serve the chicken with the coleslaw and rice or bread on the side, with the remaining ½ lime cut into wedges to squeeze over at the table

Tried it with baked chicken and it worked well. Nice version of a really useful, hardworking general all purpose base seasoning - not too much oomph but you can always add a bit o scotch bonnet to crank up the heat. I generally use Portland Bay or Tropical Sun everyday seasoning but this is one of those useful store cupboard blends that will be a regular on roast potatoes, wedges, chips plantain etc. It also gives your yorkshire puddings a bit of a lift - especially with a bit of jamaican style roast beef.

We absolutely loved the Caribbean spice pack - we had it with chicken thighs, homemade slaw, flatbreads and creme fraiche. I wouldn’t have noticed this spice without the free sample - now its on our list of Spicery lovelies. Its similar to Jerk flavouring, but more subtle - which we loved and was brilliant with chicken thighs, but could be jazzed up with fruity hot bonnet chillis if wanted. We love the Spicery kits and spices and that we can make meals that are delicious and healthy too.
