Indian Style Cauliflower Cheese with Spicy Tomato Chutney
Cauliflower cheese is the ultimate comfort food and here we’re giving it a Bengali twist using the favourite spice blend of the region known as panch phoran - a nutty blend of five different types of seed. It’s fairly mildly spiced but alongside it is a fiery tomato chutney that packs a bit of a punch! The only question is whether to serve it with a pile of plain basmati rice, a homely jacket potato or a stack of buttered naans.

- 1 large cauliflower or 2 smaller ones
- 6 tomatoes
- 450ml milk (full fat is best)
- 40g butter
- 150g cheddar cheese
- 40g plain flour
- 2 tbsp vinegar (white wine or cider vinegar is best)
- 4 tbsp sugar
- Rice, jacket potatoes or naans to serve
- Baking tray
- Medium saucepan x 2

I've just made this for the family. This is serious Sunday Night Comfort Food. One of the comments was that "this is the best cauliflower cheese that I've ever had" - the person that said that has eaten A LOT of cauliflower cheese! Absolutely amazing. Will make those winter evenings utterly delicious. Brilliant with a baked potato.
This is cauliflower cheese is sooooooo good! The perfect amount of spice. My spice-loving, French, non-vegetarian husband insisted on having it for a main course and wouldn't even wait for me to make rice or naan. `The spicy tomato chutney is a keeper too. This will be a staple in our house.

Really easy to make and very tasty. I served it along side other curry dishes, as a main for the vegetarians and everyone enjoyed it. It would go well with a roast dinner too. The relish is beautifully tangy, spicy but not hot - I'm a wimp when it comes to hot spices but this was just perfect. Loved it.

Very yellow but very tasty. The chutney is so full of flavour I will be making it again when I have a curry to dip poppadoms in. It was the best part.

Great indian twist on the classic cauliflower cheese with subtle spices in the cheese sauce with a punchy, spicy tomato chutney. Yum! Highly recommended.
