COOK 10 mins
HEAT 0
Serves 4
You Need:
1 lemon - zested then halved for juicing
50g sugar
1 litre sparkling water, soda water or lemonade
Ice cubes and extra slices of lemon and/or cucumber to serve (optional)
1 portion of J & T BLEND
Method:
Crush the J & T BLEND slightly with a rolling pin or heavy pan to release the flavour from the juniper berries and cardamon seeds
Boil the juice and zest of the lemon with the sugar, 200ml water and the J & T BLEND in a covered pan for 5 minutes or until the sugar has completely dissolved
Strain the mixture into a jug (discarding the lemon zest and J & T BLEND) then leave to cool
Mix the syrup with the sparkling water at a ratio of 1:5 (1 portion of syrup to 5 portions of sparkling water)
Serve in glasses with plenty of ice and a slice of lemon (if using)
