Konkani Green Curry Blend
The Konkan coast is south of Mumbai on the west coast of India, where coconut and fresh herbs are key ingredients. This simple green curry flavoured with lots of mint and coriander makes a delicious and fresh-tasting summer meal with rice and a simple cucumber and tomato salad on the side.

KONKANI GREEN CURRY BLEND (1 portion = 2 tbsp): mint, green chilli, chilli, turmeric, white SESAME, coriander, brown MUSTARD, thyme, coriander leaf, garlic, fenugreek leaf, red bell pepper, black pepper, parsley, onion, blue poppy, cumin, fenugreek, salt, ginger, green cardamon, cinnamon, cloves
Allergens are listed in CAPITALS. May contain traces of celery
Kokani Green Curry Recipe:
PREP 20 mins
COOK 45 mins
HEAT 3
Serves 4 with sides
You Need:
500g diced chicken (thighs are best) or paneer/tofu for a veg/vegan version
1 medium onion - thinly sliced
2 cloves of garlic - finely chopped
Fresh ginger - finely chopped to make 2 tsp
20g bunch of coriander - roughly chopped
100g natural yogurt (full fat is best) or dairy-free alternative
20g desiccated coconut
1 portion of Konkani Green Curry Blend
Method:
Soak the coconut and KONKANI GREEN CURRY BLEND in 200ml freshly boiled water from the kettle
Fry the onion in 2 tbsp oil for 10 minutes or until soft and translucent
Add the garlic and ginger and cook for 1 minute or until soft
Add the chicken and cook for 5 minutes or until beginning to cook around the edges
Blend the soaked coconut mixture (including all the soaking liquid) with the coriander and 1 tsp salt to a smooth sauce
Add the sauce to the chicken then cover and cook for 20 minutes or until the chicken is cooked through and coated in a thick green sauce
Stir in the yogurt to serve

This came as a one pot wonder sample with our subscription. I have immediately ordered more, it is delicious. Green fragrant curry, really easy to follow and inexpensive recipe, ready within half an hour, with very little prep. We scoffed what was meant to serve four between two of us.
