Rogan Josh is a popular curry from the Kashmir region of Northern India - 'rogan' refers to the red colour and 'josh' comes from the Urdu word for meat. It's a rich and delicious combination and is perfect on a cold winter's night with some Bombay potatoes and rice on the side!

ROGAN JOSH BLEND (1 portion = 3 tbsp): Ingredients: Kashmiri chilli, paprika, chilli, cumin, turmeric, cinnamon, fenugreek, cloves, mace, ginger, green cardamon, coriander, black cardamon, black pepper, bay, nutmeg

Slow Cooker Rogan Josh Recipe:

You Need: 

500g diced lamb or beef, or use diced aubergine for a veg version
1 red onion - roughly chopped
2 cloves of garlic - roughly chopped
Fresh ginger - roughly chopped to make 1 tbsp
2 tomatoes - roughly chopped
25g butter
2 tbsp tomato puree
Rice, yogurt, and saag aloo or Bombay potatoes to serve

Method:

Blend the onion with the garlic, ginger, tomato puree, 200ml water, ROGAN JOSH BLEND and 1 tsp salt to a smooth sauce
Place the lamb, tomatoes, butter and sauce in a deep pan, then cover and simmer on a low heat, stirring occasionally and adding an extra splash of water if necessary, for 2 hours (or 4+ hours in a slow cooker), or until the lamb is tender and the sauce is rich and thick
Serve with rice, yogurt and sag aloo or Bombay potatoes on the side
