Sumac
Sumac powder is the ground berries of a sumac bush, native to the Mediterranean and Middle East. Sumac has a stunning burgundy colour and is used liberally in cooking throughout the Levant (Lebanon, Syria, Jordan & Turkey) where its delicious tart, astringent, slightly salty flavour is used as a souring agent as lemon, tamarind or vinegar would be used in other regions.

USES: Sprinkle sumac over salads, particularly in place of lemon juice or vinegar. Use as a dry seasoning for vegetable or meat kebabs on a barbeque.
ORIGIN: Turkey
1 tbsp refill = approx 8 grams
4 tbsp refill = approx 32 grams (fits standard supermarket spice jar)
