Apple Cake Spices

This delicious cake uses two ingredients that obviously belong together, and really bring out the best in each other - fresh apples and a bottle of cider! The spice blend incorporates sweet cinnamon, a kick of ginger and allspice, and a touch of vanilla which gives a lovely fragrance to this teatime treat.

This delicious cake uses two ingredients that obviously belong together, and really bring out the best in each other - fresh apples and a bottle of cider! The spice blend incorporates sweet cinnamon, a kick of ginger and allspice, and a touch of vanilla which gives a lovely fragrance to this teatime treat. 

APPLE CAKE SPICES (1 portion = 1 tbsp): cassia, cinnamon, ginger, nutmeg, allspice, vanilla

May contain CELERY, MUSTARD and SESAME. Allergens are listed in CAPITALS

Spiced Apple & Cider Cake Recipe

You Need: 

500g apples (any type) - peeled, cored and cut into bite-size pieces
110g butter - softened
2 eggs (any size) - beaten
225g sugar (demerara sugar is best)
225g plain flour
1 tsp baking powder
300ml cider or apple juice (any type)
Whipped cream or ice cream to serve

Method:

Preheat the oven to 160°C/gas mark 3
Grease and line a 18cm cake tin
Boil the cider with a pinch of the APPLE CAKE SPICES for 5 minutes or until the liquid has reduced by half
Beat the butter with the sugar until pale and fluffy, then add the eggs one at a time, mixing until well combined
Fold in the flour, the remaining APPLE CAKE SPICES, baking powder and a pinch of salt 
Stir in the apples and 60ml of the cider syrup  
Pour the mixture into the tin and bake for 45 minutes or until the top is firm and a knife inserted into the centre comes out clean (cover with foil if the cake is starting to darken too much on top before being cooked through)
Poke holes in the top of the cake while still hot, then pour the remaining cider syrup over the cake (if you're using demerara sugar, sprinkle the cake now with a few pinches to create a crunchy topping)
Leave to cool then serve in slices with a spoonful of whipped cream or ice cream

Lovely dark moist cake with a cider aroma and just the right amount of apple. Spices added real depth of flavour. Two of our testers at home were unsure sbout the cassia flavour however as it added a sharp pungent taste to the cake. They would have preferred the spice blend without cassia. Look forward to reading other reviews!
