Bombay Beans Blend
- An easy and comforting dish that can be enjoyed on jacket potatoes, toast or even naans!

This month's free sample is a slow cooked bean dish, gently spiced with coriander, cumin, turmeric, fenugreek and chilli. It's a very easy and comforting dish that can be enjoyed on jacket potatoes, toast or even naans, and was a big favourite at Spicery HQ when we were testing it for lunch!
BOMBAY BEANS BLEND (1 portion = 1 ½ tbsp): turmeric, coriander, cumin, paprika, green cardamon, chilli, cinnamon, nigella, brown MUSTARD, fenugreek leaf, coriander leaf, black cardamon, cloves, ginger, CELERY. May contain SESAME. Allergens are listed in CAPITALS
Bombay Baked Beans Recipe:
PREP 25 mins
COOK 1 hr
HEAT 2
SERVES 4
You Need:
1 small onion - finely chopped
1 clove of garlic - finely grated or crushed
Fresh ginger - finely chopped to make 1 tsp
10g bunch of coriander (optional) - finely chopped
½ lemon
20g butter
2 tbsp tomato puree
2 x 400g tins of beans (eg cannellini, borlotti, butter beans etc) - including all the liquid from the tins
2 tsp sugar or honey
1 tbsp vinegar (white wine or cider vinegar is best)
Jacket potatoes or buttered toast, and grated cheese to serve (optional)
Method:
Preheat the oven to 180°C/gas mark 4
In a deep casserole dish, roast the onion and ginger in the butter and 2 tbsp oil for 15 minutes or until the onion is beginning to brown around the edges
Stir in the garlic, tomato puree, beans (including all the liquid from the tins), sugar, vinegar, 100ml water, BOMBAY BEANS BLEND and 1 tsp salt. Cover and bake (stirring occasionally and adding an extra splash of water if it needs it) for 45 minutes or until the beans are soft and the sauce is rich and thick
Stir in the juice of the ½ lemon and the coriander (if using), then serve on jacket potatoes or buttered toast, with grated cheese (if using) on top

Had a free sample, was very tasty, had it with cheesy mash. Needed longer than the recipe to get to a nice thick consistency, might miss the 100ml water next time
This was very good indeed. It had a mildly warming, comforting and nostalgic flavour. (Perhaps I should try "1970's Style Curry" next!) I thought after adding the two tins of beans it had a lot of liquid so decided not to add the suggested 100 ml water. I was glad I didn't. The serving suggestion was as a baked potato filling which really worked well. The alternative suggestion was on toast with grated cheese, which I can't wait to try!

Used the sample with cannellini beans, left the lid off for the last 5 minutes in the oven to thicken the sauce. served with bakers, great!!

Just had the delicious and easy to make Bombay Beans with the free spice pack included in my order. Would absolutely recommend on wholemeal seeded toast with a little bit of butter!

Bombay Beans and potato wedges, comfort food on a plate! Last time I made it, my hunch was to omit the suggested 100ml of water, and I was glad. This time I forgot and added the water as per recipe and regretted it. I had to remove the lid of the casserole to reduce the sauce. I'll remember the next time. I still think it is a great blend and a good recipe if water omitted.
