Urfa Kebabs with Sumac Salad
Kebabs are really popular in Turkey, and there's a huge range to choose from. These Urfa kebabs are made from minced meat seasoned heavily with Urfa chilli flakes and hand moulded into flattened sausage shapes. The chilli flakes are dark and purplish in colour with a rich, smoky flavour and just a hint of heat - they’re totally different to standard chilli flakes, much softer and more delicate.

- 500g lamb or beef mince
- 2 small red onions
- 2 green peppers
- 250g small tomatoes left on the vine
- 25g bunch of parsley
- 1 lemon
- 150g natural yogurt (Greek is best)
- 3 tbsp good quality olive oil
- Pitta breads to serve
