Chile Colorado with Arroz Verde
The name of this dish refers not to the state of Colorado, but to the colour of the dish (colorado means ‘coloured red’ in Spanish). It’s a popular everyday meal in northern Mexico and southern Texas, and here we’re using lots of ancho, guajillo and chipotle chillies to impart a fabulous rich colour and deep savoury flavour to this simple stew. On the side is arroz verde (‘green rice’), which gets its colour from fresh coriander and a blend of green Mexican herbs, and crunchy pico de gallo to cut through the richness of the stew.

I made this on Sunday when we had friends round. It went down a treat. Serving it with the Arroz Verde and Pico de Gallo elevated it to a restaurant type experience. The sour cream was a lovely touch too. I slow cooked the beef for 4 hours and it was scrumptious. Top marks yet again to The Spicery.
I didn't really want to leave a review out of concern that this might sell out. It is honestly the best chilli I have ever tasted & I have been making & eating chilli recipe's for over 40 years. Just the right amount of heat that makes you want to come back for one last fork full, then another, its that moreish. My only deviation from the recipe (lets face it we all do) was to cook in the slow cooker, this made the meat falling apart tender, which is the way I like to cook supermarket beef. The rice & pico de gallo compliment it perfectly. Served with a nice cold beer. Perfect.
