Obvious from the colour, our Mirchi (Chilli) Blend includes a variety of chillies to add fire to our curry recipes found in our range of Curry Legend cookbooks. Chillies vary massively in their heat as well as flavour, sweetness and colour and we've blended 3 different Indian Chillies in the right proportions to get just the right effect. Bright red Kashmiri chilli powder gives an incredible colour and sweetness to the curry without too much heat. Roasted dark chilli flakes add all sorts of complex sweet and savoury flavours as well as adding texture to the mix. Finally a pinch of hot red Guntur chilli powder gives just the right blast of chilli fire.

Visually noticeable colour difference when refilling the round tub presumably due to the age of what was left in the tub in fairness, but noticeable difference in the quality and strength of the of the new refill used in a Biryani and a Chicken curry in the last couple of weeks with a noticeable flavour improvement very impressed would purchase again .
Our mixes can vary a bit from batch to batch, but it sounds like the change in colour and flavour was probably down to the age and freshness of the blend. It will be perfectly safe to eat however long you leave it, but fresher is always best! We hope this fresh batch of Mirchi blend injects some serious heat into your curry creations!
